Soy cured egg yolk

I’m not eating eggs that often. I love eggs and this is very upsetting. In fact, I had blood taken for a food sensitivity test and it let me know that I shouldn’t be eating any dairy, egg whites, corn, peas, or food or drink made using brewer’s yeast. Essentially, all of the things that I love. Since the beginning of the year, I’ve been trying to eliminate these foods as best as possible. Luckily, as my reactions to these foods aren’t a full-blown allergy, when I crack and go for the cheese, I don’t die. I don’t feel great, but I survive.

I haven’t been cooking as much lately. We’ve been living with my mum while our renovations are being completed, so I’ve been super spoiled and treated to many delicious meals. I was supposed to be away for the weekend in NYC, but the Nor’easter that landed there on Friday morning also managed to ground and cancel our flight. In exchange for this sudden weekend without plans, I decided to get back into the kitchen.

While I’ve been cooking away, I’ve been watching ‘Ugly Delicious’ on Netflix and it is fabulous. If you’re into food documentaries, I really suggest checking this out. It’s a very interesting look at specific foods and their place in history and culture and how these items & meals are perceived and enjoyed today.

Anyway, in one of the episodes, the host travelled to Copenhagen and chatted with Rene Redzepi and his wife, Nadine Levy Redzepi. She discussed how she started posting her meals on Instagram, so I had to check it out. Her meals seemed really eclectic, like a blending of cultures. One of her breakfast posts was for a steamed rice bowl with a soy cured egg yolk so I had to try it out.

Curing an egg yolk is super simple. All you need is some soy sauce and a little time. In a sealable container, add your egg yolk and about 1.5 tablespoons of soy sauce. Let it sit in the fridge and it’ll be ready in about an hour. The colour changes and the yolk is a little stronger and more gelatinous.

In the meantime, make some rice and halve some cherry tomatoes. I also chopped up some green onions. Top the rice with the veggies and add the egg at the end. It’s so buttery and delicious.

This doesn’t even register on the hassle scale.
