Avo Toast

I use a lot of avocados. And cilantro. If you’re not into those things, this blog might be a little tiresome. Sorry, but I’m not going to change it up any time soon. Not in this sweltering weather.

One of my favourite easy lunch or breakfast meals is avocado toast. With a quick prep and clean up, this lunch is healthy and simple. The crux of this meal is the bread. You must start with a decent bread. Recently, I’ve been using ciabatta hamburger buns, because they’re solid and perfectly sized for my appetite. You’ll see in the picture below how big the bread I’ve been using is, so you may need to adjust your quantities depending on what you’re using.

The following recipe serves two. Start with one ripe avocado per person. Peel and pit them and slightly mash them in a bowl. Add two chopped spring onions, the juice of half a lime and season with salt. In this summer weather, I also like to add fresh corn kernels (about one cob for two people), but you can omit that if it’s not your thing. Mix it all together.

Toast your bread. I like to use the broiler in my oven to quickly and evenly toast both sides of my bread. Spread your avo mix on your toast, drizzle with a little olive oil and sprinkle some red chilli flakes and freshly chopped cilantro over it all. Add some chopped cherry tomatoes and maybe another sprinkle of sea salt. Voila!

Hassle level – .5 out of 10. You don’t get much easier than this!


Those tomatoes and cilantro come from my garden, so this meal is helping me work through my backyard harvest.
