That’s Nacho Cheese


I wasn’t really hungry at dinnertime yesterday, so figuring out what to make for dinner was a bit of a challenge. We wanted something easy and light that we could eat while we binge watched The People v. OJ Simpson. We are hooked on that show. It’s really good. Anyway, we settled on nachos.

Now, I prefer vegetarian nachos and I don’t particularly care for black beans. If you want to add a meat or beans to this recipe, feel free. You can pretty much clear out your fridge with this one. You can also make it slightly healthier by using baked chips and low fat cheeses. Or you can just go ALL IN! Below is a list of ingredients I used, but feel free to add or subtract any veggies or meat your like.


  • Tortilla chips
  • Cheese (nacho cheese mix is easy)
  • 1 tsp Chilli powder
  • Cherry tomatoes
  • Bell pepper
  • Corn
  • Jalapeno
  • Red onion
  • Green onion
  • 2 Avocados
  • Cilantro
  • Juice of 1 lime

Preheat your oven to 400F. Spray a baking sheet with cooking oil. Add a layer of chips. Then start adding a layer of your veggies. Dice your red onion, chop the bell pepper into fairly small pieces, and halve the cherry tomatoes. Pour over some corn: we used frozen corn for this one and it worked well. Sprinkle over 1/2 tsp of chilli powder and then your cheese. Then, add another layer of chips and repeat. Bake at 400F for about 10 minutes or until the cheese is bubbling away.

While your nachos are baking, halve your avocado and remove the peel and pit. Slice the avocado and combine with chopped cilantro and lime juice. When your nachos are done, pour over the avocado mixture.
